Observation (CORRECTED DURING INSPECTION): No prepared sanitizer available at the start of inspection in back kitchen.
Sanitizer solution at 100 ppm chlorine and wiping cloths noted in bucket once inspection had started
Corrective Action(s): Ensure 100-200 ppm chlorine solution is available at the beginning of operation to the end of the day. Change solution every 4 hours or earlier as solution becomes dirty / cloudy.

Corrective Action(s): Ensure all food is protected, covered and stored off the ground.

3. Keep all scoopers handles or entire scooper out of food product. Food handler should not need to dig through food with their bare hand to grab scooper

*Meat delivery - 2 boxes of cold meat left in bin by back door
*Ensure all potentially hazardous foods (meats, dairy, etc) are relocated into a cooler as soon as possible once delivered to site.
*Practice will be monitored during next inspection
