Observation (CORRECTED DURING INSPECTION):
It was observed that dishes coming out of the dishwasher were being dried with a tea towel.
Corrective Action(s):
Immediately stop this practice. Dishes must be air dried after being washed and sanitized. Ensure that dishes are completely dry before being put away for storage.

Routine Inspection:

Kitchen:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- High temperature dishwasher sanitizing with 78.6 degrees Celsius at dish level after the final rinse cycle.
- Temperature of domestic cooler = 3.2 degrees Celsius.
- Temperature of domestic freezer satisfactory.
- Concentration of chlorine (bleach) sanitizer in spray bottle = 200 ppm.

Storage/Back area:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- Temperature of domestic cooler maintained below 4 degrees Celsius.
- Temperatures of domestic, standup and chest freezers maintained below -18 degrees Celsius.
- Pantry maintained in a sanitary condition.

Overall:
- Chemicals stored in a designated cupboard.
- No signs of pest activity at the time of inspection.
- Foods covered and protected from contamination.
- Premises well lit.

REMINDER: dishes need to be completely dry before being stored away to prevent bacterial growth from moisture.
