- Restaurant has been closed for the past month to undergo improvements in the kitchen and sushi bar area.
- Changes made:
- Mop sink relocated into hot water tank room.
- 85 gallon hot water tank replaced with a hot water heater (gas operated).
** Please submit a revised floorplan to Fraser Health showing changes that were made during the renovation.
** Should FH find during future inspections that the hot water heater cannot meet the capacity needs of the premises, changes may be required.

- Construction has been completed. Construction items have been removed from the premises.
- Handsinks provided with hot and cold water, liquid soap and papertowels.
- Temperatures of coolers and freezer are satisfactory.
- High Temperature Sanitizing Dishwasher: 73.7 deg C at plate; Minimum Wash and Final Rinse Temperatures achieved as per data plate.
- Chlorine bleach available to make sanitizing solution for sanitizing food contact surfaces (100-200 ppm chlorine bleach sanitizing solution = 1 tsp bleach + 1 L water)
- Cleaning has been completed.

** The following items must be completed:
- Provide splash guards at mop sink.
- Seal raw wood behind hot water heater.
- Provide a shelf for cleaning chemicals.
- Seal wood trim adjacent to sushi bar area.

- Premises may re-open to the public.
**Premises must maintain reduced seating (25 seats max) as well as offer a reduced menu as previously discussed with the operator until further notice and/ or written approval is given by Fraser Health.
