[s. 14(2)] Observation (CORRECTED DURING INSPECTION): Food products stored in the walk-in cooler were note kept less than or equal to 4C. The following internal temperatures were recorded: - yogurt 8C - butter sauce 8C -Graded cheese8C. The door for the walk-in cooler was kept open for an extended period of time and staff frequently leave the door open. Ensure all food products are stored at least 6 inches off the ground. Scoops were stored directed in containers of food stored in the walk-in cooler unit. To prevent contamination of food products, ensure scoops are not stored in food containers. Corrective Action(s): Violation Score: 3 306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: Cleaning is needed on the walls and floors of the walk-in cooler as there was a build-up of old food debris. Cleaning is needed for the exhaust canopy as there was a build-up of yellow grease. Corrective Action(s): Violation Score: 3 315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)] Observation: Accurate thermometer not available for under-counter pizza cooler and walk-in cooler.
