Observation: Rodent droppings were still present on the floor behind the chest freezer and lower shelving units across the staff washroom.
Corrective Action(s): Clean and sanitize the shelving unit today. Clean and sanitize the floor behind the chest freezer to remove rodent droppings by this weekend. Monitor for signs of pest activity and continue with pest control measures.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Door seals of the walk-in-cooler do not appear to form a tight fitting seal.
Corrective Action(s): Replace the door seals of the walk-in-cooler with intact seals (made of easy to clean materials) to provide a tight seal; Correct by August 2, 2023.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1. Stand mixer bowl, deli slicer, and blades of vegetable chopper had food residue over them. This equipment was last used last night according to the Operator.

2. Sink plugs were not available at the food premises.
Correction: 1. Ensure the above-noted equipment is cleaned, sanitized, and air dried; Correct today and prior to reuse. Operator is aware to disassemble the slicers prior to cleaning and sanitizing them.

Ensure to clean and sanitize the deli slicer, vegetable chopper, and stand mixer bowls either immediately after each use OR at least every 4 hours between use ready-to-eat food products and after final use each day.

2. Operator's husband brought to functional sink plugs during the inspection (Corrected). Ensure staff follow the proper manual ware-washing method: pre-scrape, wash, rinse, sanitize, and air dry.

Follow up inspection:
-Deli slicer, vegetable chopper, and stand mixer bowl were in a clean condition.
-Storage bin for used pizza trays near the pizza oven had been cleaned.
-Staff was aware how to setup 100 ppm chlorine sanitizer in the second compartment sink for manual sanitizing.
-Both sink plugs were available at the 2-compartment sink. Manual ware-washing sign was posted.
-Both chlorine sanitizer pails were properly labelled to identify the contents.
-Tape was removed from the upper stainless steel component of the pizza storage bin.
-Tape had been removed from the table across the 2-compartment sink.
-Operator on shift held valid FOODSAFE Level 1 course training (expiration date: April 4, 2027).
-Staff informed they are registered for a FOODSAFE Level 1 course on May 21, 2023.
-Pest control program is in place on a monthly basis. Pest control invoice dated April 22, 2023 from Premiere Pest control was available.
