Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: 1) Caesar salad dressing made in house (contains raw egg) was stored at 13.4C. 2) Sliced tomatoes, cheese etc. in the same sandwich cooler was measured at 8.2 to 9C.
Correction: 1) Caesar salad dressing discarded. Potentially hazarous food must be stored at 4C or colder and over 4C for no more than 2 hours. 2) Monitor temperature of food and relocate to working cooler if the temperature of the cooler does not come down in 1 hour.
Comments

Previous wooden hot holding unit has been replaced with a stainless steel hot holding unit.
Rice was measured at 65C and potatoes >72C.
No concern with this new unit. Please obtain a NSF approved probe thermometer to test food temperatures regularly.
You may remove the old hot holding unit from the restaurant.
Mice droppings behind the dining seats have been removed.
Reminded operator to cover food properly (with a tight fitting lid) after the lunch rush.
All other cleaning issues have been completed.

*Note: Standup freezer was being repaired at time of inspection. Discussed with operator that the freezer must be <-18C before food can be placed inside. Order has been on hold until this unit is fixed.
