Observation: Accumulation of food debris and liquid observed along floor to wall junction located behind deli slicer table.
Corrective Action(s): Ensure above-noted area is properly cleaned. Food debris and/or liquid may potentially attract pest activity. Ensure hard to reach areas, such as floor to wall junctions, are properly cleaned on a regular basis to limit accumulation of debris/liquid. Date to be corrected by: Today.

Routine inspection conducted:

- Coolers at 4 degrees Celsius or less
- Freezer at -16 Celsius*
- Hot holding internal food temperatures at 60 degrees Celsius or more
- Food is stored off the ground and protected from potential contamination
- Hand washing sinks are accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels
- Stored utensils and equipment maintained in sanitary condition
- It was stated that deli slicers are washed, rinsed, and sanitized every four hours or more frequently as needed to prevent cross contamination. Timers available.
- Quaternary ammonium compounds (quats) sanitizer was measured at 200 to 400 ppm in labeled spray bottles, from dispenser, and in sanitizing compartment of ware washing sinks
- Chemicals are labeled
- High temperature dishwasher achieved at least 71 degrees C at the utensil surface during the final rinse
- No signs of pest activity observed
- Temperature log is up to date
