Observation (CORRECTED DURING INSPECTION): Dishes were being run through dishwasher when proper rinse temperatures were not yet achieved.
Corrective Action(s): Put all dishes that were previously washed today through dishwashing cycle again. Always ensure that the proper Wash and Final Rinse temperatures are achieved before running dishes through.

*Final Rinse Temperature gauge must reach at least 82 deg C

Note: It took >10 cycles for the dishwasher to reach the proper temperatures at the gauge and for the temperature at dish to reach 71 deg C. Ensure that staff are trained to check temperatures before using unit. It is highly recommended that unit receives regular maintenance servicing.
