- Quats sanitizer solution available at 200 ppm in spray bottles and sanitizing pails. Good. - Alto-Sham hot-holding unit was set at 155F at time of inspection. Only one item was being hot-held at the time, (steak) measured at above 60C (above 140F). Good. - Staff have been only storing inserts for hot-holding near the back of the drawers. Please continue to monitor hot-holding temperatures in the Alto-Sham. - Ensure hot-holding temperatures for items held in Alto-Sham are also being recorded on your daily temperature logs. Thank you.
