Routine inspection conducted and the following were noted:
All cooler units were less than or equal to 4C.
Freezer units at -18C.
Food stored in the bbq units were at less 60C internally. Units were equipped with thermometers.
Hot foods displayed in the buffet station were 60C.
Probed thermometer available for monitoring internal temperature of food items.
Pre-portioned hot dim sum items in hot holding units were kept at 60C. Majority of the food item were time track with labels. According to staff, pre-portioned hot dim sum products have a 2 hour shelf life before being discarded.
General sanitation was satisfactory.
Hand washing stations satisfactory.
No pest activity noted. Facility has an on-going weekly or bi-weekly contract with a pest control company. Pest reports were available for review.
Quats dispenser at 200ppm. Test strips were available.
Ware washing sinks and prep-sinks were satisfactory.
Food items stored at least 6 inches off the ground and properly covered.
