Observation (CORRECTED DURING INSPECTION): One of the bleach sanitizer spray bottles was noted with > 200 PPM chlorine residual (chlorine test strip bleached out).
Corrective Action(s): **Issue corrected at the time of inspection** Sanitizer spray bottle was diluted and 200 PPM chlorine residual was detected after the dilution. Use the sanitizer test strips to confirm that there is between 100 - 200 PPM chlorine residual before using.

Observation: Debris and buildup noted in the following areas:
1. On the floor below the 2-compartment sink.
2. In the basins of the 2-compartment sink and the prep sink.
3. In the interior of the prep cooler (across from deep fryer).
4. In one of the deep fryer cabinets.

Dust buildup noted on the ceiling above the back of house cooking area.
Corrective Action(s): Clean and sanitize the abovementioned areas and maintain in a sanitary condition at all time.

Comments

Routine inspection conducted today:
Hand wash stations accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were holding food at 4.0C or below.
All freezer units were holding food at -18.0C or below.
Hot hold units for rice and miso soup were held at above 60.0C.
Sushi rice was noted with a pH of 3.5.
Drain plugs available for the 2-compartment sink for manual warewashing.
No signs of pest activities noted during the inspection.

Reminder to never mix different chemicals together (detergent was noted mixed in a container with bleach) as toxic byproducts may be produced when different chemicals are combined. Solution was poured out and replaced by a bleach only sanitizer solution.
