- Routine inspection is conducted: - Handsinks in kitchen, bar area and washrooms are supplied with hot and cold running water, liquid soap and paper towel - All coolers - walk-in cooler, line cooler, prep coolers, bar coolers are measured at less than 4C. Accurate thermometers are available. - Walk-in freezer is less than -18C - Hot holding units are greater than 60C - Reviewed the cooling procedures - all hot foods are cooled from 60C to 20C within 2 hours and from 20C to 4C within next 4 hours - Food storage practices are satisfactory - Dishwasher is measured dispensing 50ppm chlorine solution during final rinse cycle. - Bar glass washer is measured at 12.5 ppm iodine residual during final rinse cyle. - Food contact surface sanitizer is measured at 200pm quats solution in spray bottles - No evidence of pest activity is noted at the time of inspection - FoodSafe certification is verified - General sanitation is satisfactory
