209 - Food not protected from contamination [s. 12(a)] Observation: Surface sanitizer spray (labelled bleach spray) was at >200 ppm chlorine residual and was bleaching out test strip. If bleach concentration is too strong, then there may be bleach residue on your food contact surfaces that could chemically contaminate your food. Corrective Action(s): Dilute solution such that final chlorine residual is at 100 ppm chlorine. Violation Score: 3

Routine inspection conducted: Church kitchen is used for monthly pancake breakfasts (for congregation/members only) and is also rented out for use. - Handwashing station equipped with hot/cold running water, liquid soap, paper towels. -Walk in cooler at 4 deg C -Upright two door freezer was not plugged in or in use at time of inspection. Staff member indicated that it no longer functions properly and that they will be replacing it with a smaller freezer. As discussed, the replacement freezer must be capable of storing all foods without blocking any cold air circulation within the unit. - Hot holding unit was not on at time of inspection. - Dry storage area is good -General sanitation very good (floors, walls, underneath and around all cooking equipment) -No signs of pest activity -High temperature dishwasher achieved 72.3 deg C on rinse cycle
