Observation: Food debris was observed under the prep table near the dishwashing sink that could attract rodents.
Corrective Action(s): Ensure that facility is kept in sanitary condition. Remove the food debris under the prep table and clean the area properly.

Observation: Only one staff was working at the time of inspection. Staff did not have FOODSAFE Level 1 or equivalent.
Corrective Action(s): Ensure that in the absence of operator, at least one staff on duty must have FOODSAFE Level 1 or equivalent. Schedule staff shifts accordingly.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature:
- Walk-in cooler maintained at 0C.
- Stand-up freezer at -17C.
- Pizza prep cooler top at 4C and bottom at 1C.
- Pop cooler at 4C.
- Hot-holding at 73C.
- Hot holding of pizza in "Hot-N-Ready" pizza holder at 76C.
- Temperature logs were maintained and found up-to-date.

Hygiene and Sanitizing:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in front service area.
- Sanitizer pails available in food prep area and the concentration of QUATS noted at 200ppm.
- 3-compartment sink available for dishwashing. Staff demonstrated proper steps for dishwashing - wash, rinse & sanitize.
- Utensils and tongs were found in sanitary condition.
- Mop sink was equipped with backflow preventer.

Storage:
- All food items were stored at least 6" off the floor.
- All products were either in original packaging or covered inside coolers.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Pest Management:
- Professional pest control company conducts routine checks. Last inspection conducted on August 17, 2021.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.
- Back door was closed at the time of inspection.
