Observation: Empanada roller not clean. Stored in unsanitary manner.
Pots and dishes stored in mop sink.

Correction: Dough roller needs to be taken apart nightly and properly cleaned and sanitized.
Nothing should be stored in mop sink other than mop and bucket.

NOTE: Dishwasher unit has not been installed yet. Technician missed the appointment. Ensure facility has adequate hot water tank size to supply facility with enough hot water to meet demands of dishwasher and other needs. Please contact FHA once dishwasher has been installed so that FHA can check the equipment prior to use and approve new equipment.

NOTE: Third compartment sink filled with 200ppm at time of inspection
