Observation (CORRECTED DURING INSPECTION): Staff isn't using appropriate concentration of bleach for dishwashing or for the spray bottle.
Corrective Action(s): Use 1/2 tsp bleach in 1L water for sanitizing as discussed.

Observation: Seasoning was stored uncovered in an opened bag. Disposable dishes at the FOH weren't protected from contamination from rodent urine/droppings.
Corrective Action(s): Store all dry goods in closed containers with lids. Store all disposable dishes and cutlery in rodent proof containers.

212 - Operator has not provided acceptable written food handling procedures [s. 23]
Observation: Coolers aren't labeled as per temperature logsheet. Only the meat warmer temperatures are being recorded.
Corrective Action(s): Label all the coolers as discussed. Record temperatures of each hot holding unit, not just the meat warmer.

304 - Premises not free of pests [s. 26(a)]
Observation: Several mice droppings observed behind the chest freezers, under storage shelving,on the floor by the hot water heater and along the base of the prep counters. Droppings noted in the FOH on the shelving used for storing takeout containers.
Corrective Action(s): Move all the items and thoroughly clean the areas. Hire a pest control complany and have them come in every 2 weeks for at least 2 months. Keep service reports onsite.

Rice temperature is 66 degC; meats are hotheld above 60 degC; beans are at 61 degC
Meats are sliced off then grilled (secondary cook step) before being placed in the warmer
