Observation (CORRECTED DURING INSPECTION): - It's 1pm and there is an event tonight, staff are busy preparing food in the kitchen. No sanitizer available in both buckets or spray bottles.
Corrective Action(s): - Staff made a 200ppm bleach solution to snitize the food contact surfaces.
- Please make sure sanitizer is avalable prior to prepare food.

303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: - High temperature dishwasher measured 63.8C at the final cycle on the dish level.
Corrective Action(s): - Repair the dishwasher in order to reach temperature to 71C. As there is an event tonight, there are 2 options: cancel the event; wash all the equipment in the 2-compartment sink, serve clients with single use utensils.
- Make 100ppm bleach in the 2nd sink by adding 10 teaspoon bleach in 20L water to sanitize the equipment.

Routine inspection conducted with the presence of the operator.

- Hand sinks fully equipped with hand soap, paper towel and hot/cold running water.
- 2 Walk-in coolers and upright coolers maintained at 4C or less.
- Freezers (chest, walk-in) were at or below -18C.
- No hot holding observed at the time of inspection.
- Scoop of the Ice machine stored inside, the handle not touching ice.
- Food containers in the walk in cooler properly covered.
- Vent hood was in a sanitary condition.
- Dry food items stored off the ground.
- No pest activities observed at the time of the inspection.

Note: (1) clean the can opener and the pull-down shower head regularly, food debris easily built up.
(2) Clean the interior plastic guard of the ice machine regularly.
