305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation:
Staff have the front delivery door open and the back door propped open due to the hot temperatures. This shall not be done as pests (flies, ants, rodents) are able to enter the premises and contaminate the food.
Corrective Action(s):
Immediately close all doors and windows. They must remain closed unless screens or air curtains are installed to prevent the entry of pests.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
The high temperature dishwasher is not working and staff are manually washing dishes. However, the premises only has a 2-comp. sink to prepare food, and wash & sanitize dishes. This is inadequate and doesn't allow staff to properly sanitize dishes.
Corrective Action(s):
Immediately have the dishwasher repaired and brought into working condition. Train staff to fill a third basin with bleach and hot water (1 tbsp. bleach per 4L of hot water) to sanitize dishes. Staff indicated that parts are on order for the dishwasher.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation:
Each cooler and freezer unit was missing a thermometer inside the unit, this was mentioned in the previous inspection report. The presence of thermometers allows staff to monitor and ensure they are maintaining the correct temperatures.
Corrective Action(s):
Purchase and install a working thermometer into each cooler and freezer unit.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C, and freezers -17C.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- FoodSafe certified staff present.
- Bleach sanitizer used and had 200ppm [Cl2]
- General sanitation level has improved and is good.
- No signs of pests.
- Foods stored 6" off the floor on shelves; in covered food grade containers; and in groups to prevent cross contamination.
- Staff handle foods with utensils and wash hands frequently.
- Premises is clean and organized.
- Owner sold mobile food cart, this location is NO longer the home-base.

A follow-up inspection to occur, contact our office when the dishwasher has been repaired. Failure to complete the repairs in the specified time may result in the closure of the premises until it is.
