Observation (CORRECTED DURING INSPECTION): Potentially hazardous food (cheese and shell eggs) were in the under-the-counter cooler above 4 degrees C.
Corrective Action(s): The under-the-counter cooler was below 4 degrees C (40 degrees F) earlier today based on the temperature record sheet. The above-noted food was transferred into another cooler at or below 4 degrees C by staff. Ensure cold potentially hazardous food is stored at or below 4 degrees C (40 degrees F).

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Two of the four sanitizer pails had less than 50 ppm chlorine sanitizer.
Corrective Action(s): Manager had staff setup 100 to 200 ppm chlorine sanitizer in the sanitizer pails. Manager directed staff to not over-dilute the sanitizer in the sanitizer pails. Ensure chlorine sanitizer is maintained at 100 ppm to effectively sanitize surfaces.

Observation: Under-the-counter cooler below the prep. line was above 4 degrees C (measured between 7.1 to 8 degrees C).
Corrective Action(s): Keep the above-noted cooler empty of cold potentially hazardous food (that is not time-tracked) until it can be maintained at or below 4 degrees C; Effective immediately. Manager called the technician to re-service the cooler tomorrow. Provide an update to the Environmental Health Officer once the cooler is re-serviced.

Comments

Both handsinks were supplied with liquid soap, hot and cold running water, and single-use paper towels.
Staff were observed properly washing their hands.
Walk-in-freezer temperature was satisfactory.
One under-the-counter freezer was empty, unplugged, and had a sign over it "out of order". Ensure to continue keeping this freezer empty of potentially hazardous food until it can be maintained at or below -18 degrees C (0 degrees F). Manager informed they have placed an order for a replacement under-the-counter freezer, however are awaiting for the new unit to arrive.
Apart from the under-the-counter cooler near the prep. line, other coolers were at or below 4 degrees C (40 degrees F).
Note: The cooler near the desk is designated for staff lunches only according to the Manager.
Hot-held food was at or above 60 degrees C (140 degrees F).
Cooking internal food temperatures were reviewed: cook beef to a minimal of 71 degrees C internal temperature (160 degrees F) and poultry products to at least 74 degrees C internal temperature (165 degrees F).
Time-tracking procedures were in place for condiments held at ambient temperature in accordance with the corporate food safety plan.
Ice machine and ice bin were in a clean condition.
3-compartment sink was supplied with hot and cold running water. Sink plugs were in use.
200 ppm QUATS sanitizer was available in the labelled spray bottle and third compartment sink.
100 ppm chlorine sanitizer was available inside two of four sanitizer pails.
Hydrogen peroxide cleaner disinfectant was within the manufacturer's recommended concentration. Test strips were available on-site.
Pest control program is in place on a monthly basis. Manager informed they have recently switched to another pest control company. Note: One fruit fly was evident near the customer beverage dispensing station. Manager had staff clean up the spill near this counter during the inspection. No other signs of recent pest activity were evident at the time of inspection.
Manager on shift had valid FOODSAFE Level 1 course training (expiration date: August 24, 2024).
