Comments

- Operator is processing natural bars made primarily with mulberries, nuts and seeds. No significant changes to process or operation except for changes to variety/flavour. Matcha will be discontinued and replaced with cardamom. Ingredients are blended together, baked and cooled in the freezer prior to packaging. Product is shelf stable.
- Processing has been limited; however, contract maintained with YVR Prep and Operator holds valid business licence with the City of Burnaby.
- Contract with YVR Prep is based on hourly use. Time is booked when needed.
- Ingredients are purchased prior to production. Only dried goods needed (no potentially hazardous foods)
- Equipment used present at time of the inspection. Equipment/utensils maintained in sanitary condition.
- Station in use (#4) maintained in sanitary condition. Quats sanitizer solution in spray bottle at station measured 200ppm.
- Handsinks accessible to station supplied with hot and cold running water liquid soap and paper towel.
- High temperature dishwasher operational and met sanitizing temperature required. Final rinse was 73C at dish surface.
* Operator is looking into ways to extend shelf life such as nitrogen flushing. Prior to proceeding, Operator to submit specifications to Fraser Health for review. Additionally, food safety procedures would need to be updated.
