Observation (CORRECTED DURING INSPECTION): Sanitizer was not prepared at time of inspection. Cutting board, meat saw, meat grinder observed having meat residues. Operator indicates that they clean and sanitize the equipment at the end of day.
Corrective Action(s): *Sanitizer must be available and used throughout the day to sanitize food contact surfaces.
*Ensure sanitizer (chlorine bleach and water) solution is used frequently (ie. every 2 hrs) throughout the day.
*Mix bleach at a ratio of 1 tbsp per 4L of water.
