Observation (CORRECTED DURING INSPECTION): Handwashing with gloves was attempted regularly by staff during inspection after each task and or order
Corrective Action(s): Proper handwashing does not including the wearing of gloves.
Ensure disposable gloves are removed before washing hands with warm running water and liquid soap, followed by drying with paper towel. If gloves are required for the next task then put on new disposable gloves and begin task.
Owner will review practice with staff and educate them on the change of practice.

Observation: 1. Large plastic storage bins used to pickle radish
2. Sesame seeds and dry noodle packages opened and placed back on shelf
Corrective Action(s): Ensure all food is protected from contamination.
1. Replace plastic storage bins with food grade bins to store or process food (pickling).
2. All opened soft packages of food must be placed into a pest proof container with a lid.

Observation: 1. Some old dry mouse droppings noted in back room floor around large bin of rice
2. Food debris on lower shelves near chicken prep station
3. White batter splatter on wall
Corrective Action(s): Ensure all hard to reach areas and high splatter areas are cleaned routinely to prevent build up.Clean up any rodent droppings to allow for easy monitoring of recent activity.

- Coolers maintained under 4 deg.C:
1. Salad bar: 3 deg.C
2. Diamond cooler: 4 deg.C
3. Undercounter cooler next to H/W sink: 4 deg.C
4. Standing cooler: 4 deg.C

- Food stored off the ground and protected from contamination.
- 200ppm QUATS available in sanitizer labelled bottles through out facility.
--> manually mixed - recommend getting mix dispenser at janitor slop sink and have test strips available
- Pest control provided by Terminex PC every month or more frequent as needed. Reviewed last PC report conducted Dec 15, 2020 - no concerns noted
- Low temp dishwasher noted at 50ppm chlorine
--> test strips available.
- General sanitation satisfactory.
- Thermometers available in coolers.
