Damp reused paper towels are then kept on counter top for further use. Corrective Action(s): Re-used paper towels were discarded. To prevent cross contamination and bacteria growth, towels used to wipe food contact surfaces are to be single-use ONLY or stored in a container of sanitizer when not in use. Violation Score: 5
