Observation: Sugar residues noted underneath the soda fountain drink storage area at back-of-house.

Comments

Routine inspection conducted for food service establishment selling self-serve hot dogs, taquitos, and corn dogs. This facility is also a food store.
The following observations were made:

1. Temperatures
- NOTE: Hot dogs, corn dogs, and taquitos are hot-held for a maximum of 4 hours. Discard logs available for review
- Cooling wells at 2C
- Hot-holding units at 58C - later adjusted to 60C at time of inspection. Hot holding logs indicate that the hot holding units were >=60C this morning
- Heating unit underneath the display reheats hot dogs to 165F prior to display on roller grill
- Hot dogs in the roller grill had an internal temperature of 60C
- Gehl's Cheese Sauce (perishable variety) maintained at 60C inside the hot-holding unit
- Mini-fridge underneath the roller grill maintained at 3C (NOTE: Please ensure that all corn dogs are inside original containers or plastic containers with lids - do not leave them out)
- Temperature logs maintained and up-to-date

2. Store Temperatures
- Display cooler at 4C (next to hand wash station)
- Walk-in cooler at 4C
- Center-aisle stand-up cooler (beverages) at 4C.
- Chest display freezers at -18C or less.
- Milkshake freezer at -15C
- Chilled cream dispenser at 4C
- Back-of-house stand-up freezer at -18C
- Temperature logs present and maintained.

3. Hygiene and Sanitizing
- Hand wash station stocked with hot/cold running water, liquid soap and single-use paper towels.
- Three compartment sink available with drain plugs
- Sanitizer dispenser releases 200ppm quaternary ammonium compound
- Tongs, inserts, and lids are well maintained. Back area for cleaning and sanitizing items has recently been fitted with a sprayer nozzle at the centre of the sink - ok

4. Storage
- Sneeze guard present for display of hot-held sausages.
- Hot dog buns are stored on a shelf, pre-packaged. Nachos are pre-packaged
- All food items stored at least 6" off the floor.
- Dedicated shelf at front of walk-in cooler available for bulk storage of hot dogs, corn dogs
- NOTE: Further attention should be given to organizing the front of the walk-in cooler

5. Pests
- No recent pest activity was noted at time of inspection
- Professional pest control company conducts monthly audits. Most recent pest control report was on Sep 16, 2019. No pest activity noted in this report
