209 - Food not protected from contamination [s. 12(a)] Observation (CORRECTED DURING INSPECTION): Raw meat were stored above half-baked wings in the walk-in cooler. Chef notified and he immediately rearranged items to avoid any contamination. Corrective Action(s): Ensure good food storage practices are maintained such as ready to eat foods stored above raw foods to avoid contamination. Violation Score: 3

First routine inspection conducted after initial. -Facility is maintained in an overall sanitary manner -At the end of the inspection all handwash stations are fully equipped with liquid soap, paper towels, and hot and cold running water -All coolers are at or below 4C -All freezer units are at or below -18C -Dry storage is good! Pest proof containers used and food stored off the floor -Low temperature dishwasher achieves 50-100ppm Chlorine -Glasswasher achieves 12.5-25ppm Iodine -QUAT sanitizer in bottles achieve 200ppm -No signs of pest activity
