Observation: 1. Lime juice bottle is stored in a spray bottle but is unlabelled. Ensure bottle and food contents are labelled and only used for food.
2. Tray of diced tomatoes stored on the floor of walk in cooler.
Corrective Action(s): 1. Ensure bottle and food contents are labelled and only used for food to prevent contamination of chemical bottles with food bottles. Only use bottles/containers which are food grade for storage of foods.
2. Ensure to always store food on dedicated shelving at least 15 cms off the floor.
Both corrections required today.

Premise is sanitary.
No signs of pest activity at the time of inspection. Pest control program in place.
Hot and cold water available.
Dedicated hand sinks with liquid soap and paper towels available.
Staff demonstrate good personal hygiene and sanitary hand washing.
Washrooms are sanitary with fully stocked hand sinks.
Food is from an approved source.
Equipment in good working order.
Temperature holding is adequate and in use with accurate thermometers.
Take out containers and utensils are sanitary.
3-compartment sink in use. Quat sanitizer in use at 200 to 400 ppm.
Dishwasher final rinse at 50 ppm chlorine solution at the plate.
Recommendation: daily chemical tests and logs is recommended to ensure chemical sanitizer is at correct concentration.
Daily log sheet provided to operator.
Valid Permit posted in conspicuous location.
