Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: No sanitizer solution was available on site to sanitize the food prep tables. Upon asking, staff stated that they were not aware of sanitizing the food prep surfaces. Staff couldn't find the bleach bottle during inspection.
Correction: Food contact surfaces such as prep tables must be cleaned and sanitized regularly with an approved food grade sanitizer to prevent the risk of food contamination.

Follow-up inspection conducted to routine inspection (report #TGIL-CBPRL2)

Observations:
- Sanitizer pail was available on site & the concentration of bleach noted at 200ppm
- Operator had valid FOODSAFE Level 1 certificate.
- Chest freezer was repaired and the interior of the door was replaced with a smooth, impervious & easy to clean material.
- Raw chicken was stored in the bottom shelves in walk-in cooler.
- Temperature of walk-in cooler measured at 4C.
- Mouse droppings were removed and the area was cleaned.
