Observation (CORRECTED DURING INSPECTION): Chlorine sanitizer was not setup at the time of inspection.
Corrective Action(s): Operator setup 100 ppm chlorine sanitizer in two sanitizer pails to santize surfaces. Ensure 100 ppm chlorine sanitizer is available to effectively sanitize dining tables and preparation surfaces.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Paper towels were not available at the handsink in the front service area, and at the handsink in the staff washroom.
Corrective Action(s): Operator re-stocked paper towels at both of the above-noted handsinks at the time of inspection. Ensure handsinks are supplied with liquid soap, hot and cold running water, and single-use paper towels to enable proper handwashing practices.

Observation: Prep. cooler was above 4 degrees C (measured at 9 degrees C).
Corrective Action(s): Operator informed prep. cooler was below 4 degrees C prior to the lunch rush. Monitor the refrigeration temperature and maintain the prep. cooler at 4 degrees C or less; Correct today. Prep. cooler contained a small amount of vegetables and alfalfa sprouts at the time of inspection. Operator informed it was stocked with a small amount of food for the lunch rush. Ensure potentially hazardous food is stored/displayed at 4 degrees C or less.

Comments

Other coolers (for storage of potentially hazardous food intended for sale/service to the public) were at 4 degrees C or less.
Note: Small cooler behind the entrance into the kitchen is for personal use of the Operator, and is not intended for food storage for the public.
Pop cooler was above 4 degrees C, however is for storage of shelf stable beverages only.
Freezers were at -18 degrees C or less.
Hot-held rice was at least 60 degrees C internal temperature.
Dishwasher final rinse chlorine sanitizer residual was at 100 ppm (minimal required: 50 ppm).
2-compartment sink was supplied with hot and cold running water. Liquid soap and paper towels were available.
Operator on duty held valid FOODSAFE Level 1 course training (expiration date: March 18, 2030).
No signs of recent pest activity were evident at the time of inspection.
