Observation (CORRECTED DURING INSPECTION): Shredded cheese measures 7.3C. Chopped mushrooms measured 6.9C. Pasteurized egg measured 6.7C. Prosciutto measured 6.8C. Ham measured 6.5C. These foods were measured with multiple probe thermometers and were stored in the walk in cooler for more than 2 hours.
Corrective Action(s): Discard are potentially hazardous foods stored above 4C. Do not sell any potentially hazardous foods until walk in cooler maintains 4C or less otherwise you will run into the same temperature abuse of foods problem.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1) Open bags of dry flour were not stored in pest proof containers
2) One bowl of flour stored on top metal shelf in preparation area without a cover
3) Wire and porous shelf by the retail area where bread for public sale was stored below employee drinks and snacks
4) Soap dispenser to the side of the handwash sink is a bit too far and may result in contamination of the flour bags nearby
5) Black garbage can stored ontop of flour bag which left a soiled residue on the bag
Corrective Action(s): 1) Keep foods open bags of flour in pest proof containers
2) Cover all food in containers and protect them from contamination
3) Store employee drinks, snacks, and other personal belongings in a manner that would not contaminate food
4) Move soap dispenser to a spot that would not result in water potentially splashing onto the flour bags
5) Store garbage cans on the floor and not on top of food. Discard the one flour bag.

Observation: Both corners of sliding door have an apparent visible gap that is noticeable.
Corrective Action(s): Check to ensure the gaps are not greater than 1/4 inch and seal them as appropriately to prevent pest entry

Observation: Zep commercial sprayer bottle that is used for water and glaze states that the bottle was intended for cleaners, insecticides, and other chemicals. This does not seem to be designed for food use.
Corrective Action(s): Ensure materials are food grade so that chemicals and other contaminants do not leach into the food

Observation: Walk in cooler measured above 4C with several thermometers: operator thermometer inside the cooler measures 10C and wall thermometer measures approximately 6C. Inspector probe thermometer measures 7.1C and other foods probed to be above 4C.
Corrective Action(s): Operator to call technician to fix the cooler and maintain food safe temperatures

Observation: 1) Hand sanitizer bottles stored in dry storage area above shelves where food packaging is stored
2) Mineral oil bottle which label directions state to not take with meals was stored on dry storage shelf
Corrective Action(s): Keep chemical storage in properly designated areas to prevent contamination of food and food contact surfaces

Observation: 1) Lighting in premises needs to comply with the approved plans of 540 lux. Some lights in preparation areas have burnt out and dry storage room is very dark in the corners and under the shelves.
2) Adequate air drying space is to be provided to ensure proper air drying can take place
Corrective Action(s): Maintain premises as per approved floor plans by the health department
