302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation (CORRECTED DURING INSPECTION): - Sanitizer not available to sanitize food equipment (ice scoop, milk and cream jugs, coffee urns). - Miscellaneous items stored in 2-compartment sink in back storage room making it not available for equipment washing and sanitizing purposes. Corrective Action(s): - Obtain chlorine bleach to make 100-200 ppm chlorine bleach sanitizing solution. (1 tsp chlorine bleach + 1 L water). **Only use regular household bleach. "Splash-less Bleach or Colour Safe Bleach" are not acceptable. - Remove all items from 2-compartment sink and ensure that it is accessible to facilitate equipment washing and sanitizing. [Correction Date: Immediately] Manual Warewashing and Sanitizing Method reviewed with employee at time of inspection: 1. Wash with warm water and detergent. 2. Rinse with clean warm water. 3. Sanitize using 100-200 ppm chlorine bleach solution. 4. Air Dry. **Review the manual warewashing and sanitizing method with employees. Violation Score: 15
