Observation: Found grease build up in sanitizing sink of the 3 compartment sink, as well as food debris build up on dough mixer.
Correction: Ensure all food equipment, sinks and dough mixers included, are kept in a sanitary manner.
Wash and sanitize 3 compartment sink and dough mixer to remove grease and food build up before using today.

Observation: 1. Found multiple containers to have grease and food debris still on them after being washed
2. Found multiple containers stacked on drying rack before dry
Correction: 1. Must ensure all equipment (inserts and lids) are washed and sanitized to remove all food debris and grease. Wash with soap and warm water, rinse with clean water, soak for 2 mins in sanitizer, then air dry.
2. Do not stack inserts inside one another while drying, stagger them so the water runs out. once dry then can stack.
