A routine inspection was conducted, the following observations were made:
- Coolers below 4C; freezers below -15C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottles had [Cl2] above 200ppm. Only add 1/2 tsp of bleach to 500mL of water in the spray bottle.
- High temperature dishwasher rinse cycle had a temperature of 79.6C at the plate's surface, as per max/min thermometer. The dishwasher soap being used is a chlorinated and alkaline product. This creates the bleach odor and the slippery feeling of the dishes. The chlorinated dishwasher soap may degrade the dishwasher components faster.
- All foods are stored in food grade containers; covered; labeled; date coded; foods are stored in groups; foods are stored separately from the "Breakfast Program" in the walk-in-cooler; and the foods are stored 6" off the floor on shelves, racks or platforms.
- No expired foods in use. FIFO rules being followed.
- Chemicals and cleaners are being stored away and separately from foods.
- General sanitation level is good. The floors appear to of been professionally cleaned and waxed.
- No signs of pests.
- FoodSafe certifided staff present.
- All in order.
