Observation (CORRECTED DURING INSPECTION): Multiple line/prep coolers running warm in grill area. Scallops 13C (using probe thermometer), cooked pasta 20C, calamari 15.5C.
Corrective Action(s): Discard all potentially hazardous foods in back line prep coolers that are running warm. Do not use these coolers until repaired. All potentially hazardous foods to be stored in walk in cooler at less than 4C. Bring out small portions and place on ice to be used up within 2 hours until repaired. Operator has contacted a repair person who is scheduled to visit this afternoon. Do not use the prep/line coolers until they maintain less than 4C.
