Kitchen vent hood cover is cleaned and sanitized.
The operator does not have a test strips for current Ecolab sanitizer (lactic acid). Operator is directed not to use this sanitizer until they acquire a test strip and verify its concentration. EHO showed alternative method using bleach.
Oil spill behind the fryer is cleaned. Continue monitoring the spill behind the fryer.

Sanitizer mixing instruction: 2ml bleach + 1L of water.
