306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
1) Old mice droppings found along all the base of walls in the kitchen and food storage rooms, on lower shelves below the steam tables, and on some box/bags with food in them (in the dry storage room). Dropping contain bacteria which can get into food, and the scent of mice droppings and urine will attract more.
2) There is mould and mildew on the ice shield inside the ice machine. The mould and mildew could fall/touch ice, which could make a person sick.
Corrective Action(s):
1) Clean and sanitize all surfaces and areas that have droppings and urine on it. Throw away all foods which the box or bag (which the food is found in) have droppings or urine on it.

2) Clean and sanitize the interior surfaces of the ice machine. Ensure to turn it off first, empty the ice out, and then clean & sanitize it.

Observation (CORRECTED DURING INSPECTION):
The lids, on the dry baking ingredients bins, are cracked and damaged. Pieces of plastic could fall into the foods and clients could consume them. This was mentioned in past inspection reports.
Corrective Action(s):
Purchase new lids and throw away the damaged ones.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -14C or colder; thermometers present; and temperatures recorded daily.
- High temperature dishwasher had a rinse cycle temperature of 82.5C at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in cloth buckets had 200ppm strength.
- All foods stored in food grade containers; covered; labeled (80%); date coded (80%); stored in groups with raw proteins separate or below RTE foods; and all foods stored 6" off the floor on shelves, racks, or platforms.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is satisfactory. Improvement needed in the mentioned areas. Increase the frequency which detailed cleaning is done (shelving racks, exterior surfaces of food containers & lids, undersides of sinks and tables, etc.).
- Eccolab contracted for pest control. Glueboards, snap traps, and catch-all-traps (tin cans) being used to eliminate the mice population. Ensure the back door is kept securely shut, as per the posted sign.
- FoodSafe certified staff present.
