Comments

Routine inspection conducted at the school cafeteria. No cooking or food preparation was conducted at the time of inspection. The facility was ready to be closed after lunch. The following observations were made during the inspection: Temperature: - All coolers were found at 4C or less. - Freezers maintained at -18C or less. - Temperature logs were maintained and found up-to-date. Storage: - All food items were stored at least 6" off the floor. - All products were found either in original packaging or covered inside coolers. - Storage area was well-organized. - Chemicals and cleaners were stored separate from food preparation areas. Sanitation & Maintenance: - Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels. - Hot temp mechanical dishwasher available but was not run at the time of inspection. - 3 compartment sink maintained in sanitary condition. - QUATS sanitizer (conc. 200-400ppm) is used for sanitizing food contact surfaces. - Utensils, tongs and equipment were found in sanitary condition. - Sanitizer logs were maintained and found up-to-date. Pest Management: - No visible signs of pest activity observed at the time of inspection. Administrative: - Operating permit was posted in a conspicuous location.
