Observation (CORRECTED DURING INSPECTION): Small portion of raw meat was stored at room temperature; detected 18.9 C when measured with IR thermometer. Unsure how long that meat was at room temperature
Corrective Action(s): Required operator to discard the meat. Education provided that when not in use, all cold potentially hazardous foods must be stored at 4 C or lower at all times. Meat discarded at the time of inspection

Observation: 1. Magnetic knife holder was greasy
2. Metal shelving for clean dishes was not maintained in sanitary condition
Corrective Action(s): Required operator to clean and sanitize the magnetic knife holder. Ensure to clean and sanitize the knive that was stored on the holder prior to use. Metal shelving must be cleaned and sanitize as clean dishes/utensils go on it.

Observation (CORRECTED DURING INSPECTION): Food contact surface sanitizer was not available at the time of inspection. When inquired, operator started to make QUAT sanitizer. Sanitizers must be available for use at all times.
Corrective Action(s): Required operator to make sanitizer at the time of inspection. QUAT was mixed with warm water to make ~200 ppm of QUAT at the time of inspection. Ensure to have sanitizer available all day.

Observation: Observed rodent droppings in the back corner of dry storage. No live rodent sighted at the time. Droppings seemed to be old but unable to confirm if active. As per previous reports, active infestation may be present.
Corrective Action(s): Required operator to clean and sanitize the area. Regular cleaning must be conducted to see if the infestation is present and/or active.
