Observation (CORRECTED DURING INSPECTION): - Handsink in food preparation area was lacking soap.
Corrective Action(s): - Dispenser was filled with soap at time of the inspection. Ensure soap is always available at handsinks.

304 - Premises not free of pests [s. 26(a)]
Observation: - Mouse droppings noted on the floor in the following areas: corner in staff washroom, adjacent to mop sink, between small white cooler and wall at front service counter
- Ants noted at back of premises
Corrective Action(s): - Clean areas where mouse droppings were noted and disinfect areas with bleach solution. Monitor for any further activity and ensure any additional droppings present are cleaned up promptly.
- Retain the service of a pest control technician to provide monitoring and control measures for rodents and ants. Provide copy of service report to EHO for review.

Observation: - Gap noted at back door which could allow pest entrance
- Hole noted in ceiling above hot water tank
Corrective Action(s): - Address gap at back door and hole in ceiling so that entrance points are eliminated. Use pest proof materials (ie. metal, steel wool)

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: - Flour noted on floor throughout food premises particularly behind cook line and under 3 door cooler
- Grease accumulation and food debris noted on floor under deep fryers
- Accumulation of grease soiled cardboard present behind cook line
- Cardboard and styrofoam which is deteriorating present under chest freezer and fridge/freezer at back of premises
Corrective Action(s): - Thoroughly clean floor to remove all flour, grease and food debris. Ensure all moveable equipment is pulled out and the floor underneath cleaned
- Remove all soiled cardboard from premises and discard.
- Remove cardboard and styrofoam as they are not suitable materials for a food premises. All surfaces must be smooth and washable.
- Organize shelving and ensure all items (food and non-food items) are stored off of the floor so that the floor is kept clear to allow for cleaning and monitoring for pest activity.

Observation (CORRECTED DURING INSPECTION): - Glass container with white powder labelled as ant bait stored on shelving where food packaging and dry goods were stored. Label did not indicate specific substance. White powder noted sprinkled on floor at back of premises.
Corrective Action(s): - Remove substance from premises. Clean floor to remove substance from floor. Do not use pesticides within food premises.
The above was completed at the time of the inspection.
Per violation 306, retain the services of pest control technician.

Comments

- Liquid soap and paper towel available at back handsink and staff washroom sink. As noted in violation above, liquid soap was supplied to front handsink at time of the inspection
- Coolers were operating at 4C or colder
- Freezers were maintaining products in a frozen state
- Facilities present for manual dishwashing:
- Hot and cold running water available at 3 compartment sink
- Stoppers/plugs present
- 200ppm chlorine solution present for sanitizing step *Obtain chlorine test strips so that concentration can be verified
- Operator knowledgeable about manual dishwashing steps - wash, rinse, sanitize, air dry.
- Chlorine sanitizer solution present for wiping cloths in bucket and in spray bottles. Concentration measured 200ppm chlorine.
- Foodsafe requirement met at time of the inspection
