Observation (CORRECTED DURING INSPECTION): Found two buckets of cheese sauce in walk in cooler at 55C (probed temperature) - operator stated that the sauce was made about 2 hours ago.
Corrective Action(s): Operator transferred sauce into smaller portions at time of inspection. Please purchase atleast 2 ice wands to aid in cooling. CORRECT BY: July 20, 2017

Observation (CORRECTED DURING INSPECTION): REPEAT VIOLATION: No sanitizer provided by dishwasher for the final rinse at the plate surface.
Corrective Action(s): Operator primed the machine and 50ppm chlorine was available for final rinse. Please check concentration daily to ensure dishes are being sanitized.
FURTHER VIOLATIONS WILL LEAD TO A CORRECTION ORDER BEING ISSUED.

2. Debris build up noted inside ice machine.
Corrective Action(s): 1. ALL foods need to be transferred into a food grade container once can has been opened.
2. Clean and sanitize inside of ice machine as discussed.
