Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Food debris observed affixed to tray inserts on drying racks.(This is a repeat violation noted in inspection on Sept 20, 2021)
Trays observed stacked one on top of each other while still wet
Although premises has a 3 compartment sink and soap and quat sanitizer are available at the 3 compartment sink, the soap dispenser and the sanitizer were observed to be empty at the dishwasher.
Correction: All tray inserts that had food debris afixed removed to be re washed
Ensure staff are trained on how to properly warewash.
Replace empty soap and sanitizer containers.
Ensure accountability is in place for employees

Wire rack cleaned
Soap and sanitizer available for dishwasher. Final rinse tested at approx. 75ppm chlorine
Microwave oven cleaned
Tray inserts visibly were clean and dry when stacked one on top of each other.
Manager on site has food safe level 1.
Co2 cylinders secured with a chain
