Operator got staff to transfer foods to colder cooler during time of inspection
Corrective Action(s): - Walk in cooler must be maintaining temperatures of 4C or colder at ALL times
- Immediately call for service on cooler
- Ensure no foods are stored in cooler until it is repaired unless it is whole fruits and vegetables

Observation: During time of inspection, no sanitizer (0 ppm) of measured at final rinse
Corrective Action(s): - Immediately call for service and repair dishwasher so that final rinse is at 50 ppm chlorine concentration
- Purchase test strips to measure sanitizer concentration from dishwasher
- Ensure dishwasher is properly trained on how to operate the dishwasher so that adequate sanitizer levels and chemicals are being dispensed
- EHO will follow up in 3 hours, do not use dishwasher if not dispensing sanitizer, do not used un-sanitized dishes
- Currently operator has sufficient supply of dishes

* Hot holding unit maintaining food temperatures of 60C and above
Note: Ensure temperature logs are maintained 2x daily
- Chlorine sanitizer available in spray bottles, sanitizer concentration at 200 ppm
- Low temperature dishwasher available, during time of inspection, no chlorine being dispensed at final rinse (see above noted infraction)
Note: Ensure to purchase test strips to test for sanitizer concentration
- No evidence of rodents detected during time of inspection
