- Coolers (walk-in, display, undercounter) at < or = 4C
- Walk-in freezer at < or = -18C
- Hot holding units were not in use at the time of inspection. Ensure they are capable of maintaining foods at 60C or greater.
- High temperature dishwasher is available. Final rinse temperature reached 71.1C at the plate level.
- Temperature monitoring is in place
- 200 ppm Quat sanitizer available in spray bottles and from dispenser
- Dry storage room is maintained
- Food items are covered and protected from contamination
- Food items are stored off the ground
- Ventilation hood is maintained
- Ice machine is clean. Ice scoop is stored in a sanitary manner.
