Observation (CORRECTED DURING INSPECTION): Manually diluted quats sanitizer solution in container by the preparation cooler concentration observed to be ~50ppm.
Corrective Action(s): Ensure manufacturer's dilution instructions are followed. 200ppm quats sanitizer solution to be available for use at all times. Reminder to store all wiping cloths in this solution when not in use.

Observation: Fruit fly activity noted in the dishing and staff washroom area. Note: pooling water observed in the dishwashing area, likely due to the dishwashers dishwasing practice.
Corrective Action(s): Do not allow water to pool in the dishwasing area. Contact your pest control company to provide service for the fruit fly issue. Correct immediately.

Observation: Grease accumulations observed on the exhaust canopy. Food debris accumulations observed on the floor underneath the sauce buckets in the walk in cooler.
Corrective Action(s): Thoroughly clean all aspects of the exhaust canopy. Thorougly clean underneath all the shelves in the walk in cooler. Correct by August 10, 2023.

Walk in freezer not in use. Repairs required. Ensure unit is capable of maintaining -18 degrees C or less before using.
Preparation cooler inserts and drawer sections at or below 4 degrees C.
Hot holding at or above 60 degrees C.
Bar walk in cooler at or below 4 degrees C.
All hand sinks provided with liquid soap and paper towels.
All other quats sanitizer containers have quats sanitizer at 200ppm.
Dishwasher registers 50ppm chlorine during the final rinse cycle.
