Observation (CORRECTED DURING INSPECTION): Opened pot of food was stored next to the drain for the chemical dishwasher
Corrective Action(s): Ensure food stored in a sanitary manner and protected from potential contamination. Pot of food was relocated at the time of inspection.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Frozen foods were thawing at room temperature.
Corrective Action(s): Frozen potentially hazardous foods must be thawed in a refrigerator at 4C or less or under cold running water to prevent the growth of pathogens and or the formation of toxins. Commercial sink plugs can be obtained for the sink to allow for thawing of foods under cold running water.

Observation: Walk-in cooler was at 5C to 6C. Cooler thermostat was set to 30F (less than 0C).
Corrective Action(s): Service walk-in cooler and ensure it can maintain 4C or less on a consistent basis.

Comments

-Both prep coolers were at or below 4C (top and bottom).
-Glass door upright cooler was at 4C.
-Sprouts stored on a water/ice mixture and was at 4C.
-Upright freezer (far unit) was at -10C.
-Upright freezer (next to walk-in cooler) was at -12C.
-Chest freezer was at -20C.
-Hot holding was greater than 60C.
-Spring rolls were deep fried to greater than 74C.
-Cooked pork chops were cooling in single layers at ambient temperature, prior to cooling in the walk-in cooler.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum of 50ppm required for proper sanitizing).
-Quats sanitizer spray bottles labelled and tested at 200ppm.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Meat slicer properly disassembled for cleaning and sanitizing.
-Ice machine clean and well maintained.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station equipped with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 valid until March 06, 2023.

-Workplace COVID-19 safety plan posted.
-Facility is offering dine-in services. Seating capacity is posted at the front entrance.
-Tables are staggered to provide 2 metres of physical distance between customers. No more than 6 guests per table.
-Background music was not louder than regular conversation.
-Staff complete a daily health screening.
-Hand sanitizer available at the front entrance and cashier.

*Customer was observed not adhering to the face covering requirement. Customer walked to the cash register to pay and did not wear a mask. Mask must be worn at all times in indoor public spaced, except when seated to eat or drink.
