Observation: cooked chicken pieces in a voluminous container on counter -core temperature of the container at 61 deg C
Correction: You must cool foods FAST:

60 deg C to 20 deg C in 2 hours: wide-shallow pans at 1-3 inches in depth

Step 2
20 deg C to 4 deg C in 4 hours: trasfer food to the container and place in the fridge

-Small preparation cooler insert level in full use -any perishables at room temperature during lunch/dinner rushes are in small containers to meet the <2 hour rule
-fruits/vegetables stored on washable trays or in Saran wrap
-Areas requiring cleaning/sanitizing completed
-Back storage area hallway has been cleared of the foods -foods stored on the shelves
-no observations of cooling infractions -Cooling safety signs posted on fridge as reminders
