Observation (CORRECTED DURING INSPECTION): High temperature dishwasher requires a repair. Operator had already put in an order for a replacement.
Corrective Action(s): Only single use dishware to be used until then. All serving tools to be manually washed in the 2 comp sink using bleach (200ppm chlorine) as agreed.

Observation: Mechanical dishwasher not functioning properly. Operator had already put in the order for a new dishwasher.

Routine inspection conducted:

- Handwashing stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below required temperature of 4'C; Freezers operating at/below required temperature of -18'C.
- Thermometer monitoring system in place.
- 2 comp sink equipped properly.
- 200ppm chlorine solution available in a bucket to hold wiping rags.

Follow-up inspection to be conducted once the dishwasher is replaced. Until then, only single use dishware to be used as agreed at this time.
Cooking/serving tools to be manually washed at the 2-compartment sink. Please contact the health inspector for any questions or concerns.
