Observation (CORRECTED DURING INSPECTION): As per manager on duty, the grilled foods (e.g. hotdogs and taquitoes) are being reheated to 140 degF and held at that temperature. This is not correct.
Corrective Action(s): The grilled foods must be reheated to 165 degF (74 degC) then held at 140 degF (60 degC). Both the temperature dials for the back and front rollers were set at "warm". Refer to your Food Safety Procedures and follow those instructions. Educate all the staff as discussed. Manager discarded all the food items that were on the "holding" side of the grill.

Observation: Rodent droppings observed under and behind the upright freezers in the back room. A container of ice-cream found melted under one of the freezers.
Corrective Action(s): Wheel the freezers out since they're on wheels, and clean under and behind them.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Operator is using large containers to store and wash raw chicken. These containers do not fully fit inside the single compartment sink that's used for washing raw chicken or any of the compartments of the 3-compartment sink. As discussed when the store was initially opened, any dishes used for the operation of the store that requires washing/sanitizing MUST be able to fully fit inside one of the compartments of the 3-compartment sink (with the exception of the breading bin). Remove all the larger pans and replace them with the smaller ones you had before.

-Abell pest control is on contract. Service reports are on-site. Once mouse was caught in April, but none since then.
-200ppm Quats sanitizer is available
-Hand sinks are fully equipped
-14 pouches of Heinz brand baby food was removed from the shelf by the manager during the inspection since they had exceeded the Best Before date.
-Foodsafe certificates issued before 2013 will expire on July 29, 2018. Get staff recertified as needed.
