Observation (CORRECTED DURING INSPECTION): Potentially hazardous cakes inside of the bakery display cooler were observed as follows:
- 1 x Tiramisu and cakes with cream toppings (x4) ranged from 7-11C
- Cheesecakes and tarts in the display cooler were measured at 7C
Corrective Action(s): Aforementioned products were marked as shrinkage and discarded at time of inspection. All potentially hazardous foods must be kept at 4C or less at all times.

304 - Premises not free of pests [s. 26(a)]
Observation: Significant accumulation of rodent droppings observed in the following areas:
1. In the storage area adjacent to the proofer
2. One deceased mouse, surrounded by droppings, noted in the back corner of the bakery (in the crevice next to an unused stainless steel cooler).
Corrective Action(s): Remove all rodent droppings with 1 part bleach, 9 parts water. Saturate droppings for at least 10-15 minutes, then discard. Ensure that staff wear personal protective equipment. Contact your professional pest control company to continue to monitor for entry points, and ensure that you maintain the bakery in sanitary condition.

Observation: Vent next to the proofer had a grimy substance emanting from it and dripping down the stainless steel walls.
Corrective Action(s): Remove the grime and ensure that the walls are maintained in good sanitary condition.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Bakery display cooler for cakes at point-of-sale (middle and right coolers) have an ambient temperature ranging from 7C to 11C.
Corrective Action(s): A work order has been placed to adjust the cooler so that all sections are at 4C or less. Do not use the cooler until a follow-up inspection has been conducted to ascertain that the cooler reaches 4C.

Comments

Routine inspection conducted of bakery. Improvements to cleaning and sanitation are required (see violation codes above). The following was noted:

1. Temperatures
Walk-in bakery cooler at 4C
Display cooler up front at 4C, top portion of display cooler at 7C-11C (see violation code above)
Small stainless steel cooler at back of bakery at 4C
Walk-in bakery freezer at -18C

2. Hygiene, Sanitizing, Storage
Hand wash stations adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
3-compartment sink well maintained, sanitizer dispenser releases approximately 200 ppm QUATS
High-temperature potwasher sanitizes at final rinse cycle of 78C at the plate (Min: 71C at the plate or at 180F at the final rinse tank / manifold)
Dry storage products stored inside containers with tight-fitting lids. NOTE: One bag of flour was left opened. Any opened bags of flour should be placed inside containers with tight-fitted lids
Dough mixer, dough presser, knives maintained in good sanitary condition
Cutting boards were well maintained after use
