Observation (CORRECTED DURING INSPECTION): At the time of inspection no chlorine being dispensed into the low temperature dishwasher during the final rinse cycle. Operator primed the sanitizer line but still no chlorine being dispensed. Operator switched rinse aid line with sanitizer line and chlorine now being dispensed. 50ppm chlorine detected at the plate level during the final rinse cycle.
Corrective Action(s): Ensure all dishes and utensils are washed, rinsed, sanitized, then air dried through the low temperature dishwasher.

Observation (CORRECTED DURING INSPECTION): Screen door at back door has notable gaps around the door frame and there are gaps in the mesh.
Corrective Action(s): Replace this screen door and install a proper secure screen door. Correct by April 23, 2024.

Observation: At the time of inspection no chlorine being dispensed into the low temperature dishwasher during the final rinse cycle. Operator primed the sanitizer line but still no chlorine being dispensed. Operator switched rinse aid line with sanitizer line and chlorine now being dispensed. 50ppm chlorine detected at the plate level during the final rinse cycle.
Corrective Action(s): Service the low temperature dishwasher. Ensure all squeeze tubes, chemical lines, etc. are in good working order. Correct immediately. Obtain test strips to verify the final rinse cycle chlorine concentration on a daily basis.
