Observation: The temperature display of the dishwasher was not in good working order. A technician was assessing it today and will visit again tomorrow to ensure that staff can monitor the final rinse temperature of the dishwasher. Two ceiling tiles were temporarily removed as part of the renovations and still need to be replaced. Paper liner on the new stainless steel prep. table needs to be removed today.
Corrective Action(s): Ensure the following is done before you re-open the restaurant tomorrow: repair the display of the dishwasher so that the final rinse temperature can be monitored, remove the paper liner from the prep. table, and replace the ceiling tiles. Ensure all surfaces are rewashed and sanitized prior to opening for business tomorrow.

Follow up inspection:
All major renovations have been completed.
Washable tiles were installed along the wall near the dishwashing area.
The location of the dipper well and ice cream freezer was re-located but is still in the front area. The dipper well was in good working order.
Counter-tops near the front area were changed to stainless steel.
The faucet of the handsink was changed in the back area. Hot and cold running water, liquid soap, and paper towels were available at the handsink.
A new paper towel dispenser and liquid soap dispenser was installed near the front handsink.
Dishwasher final rinse temperature was 77.8 degrees C (71 degrees C or hotter) at the plate.
Coolers were 4 degrees C or less.
Freezers were -18 degrees C or less.
Bleach was available on-site.
Ice machine was in a sanitary condition and the scoop was stored in a separate container.

Health approval was granted to re-open the food premises for business.
